Irish Soda Bread

Easy, frugal and it comes together in a snap:  It’s Irish Soda Bread.  You know those Irish mothers didn’t have time to mess around! Like I say in my live-recorded vid below – real Irish soda bread contains only flour, salt, leavening agents and buttermilk.  Mix it with a spoon, roll the dough around enough to make a nice ball (it will be sticky on the inside), bake it at a high heat to crisp the outside, and you’ll have bread for your family in about 40 minutes total. Olive Oil Pizza Crust

I make this pizza crust every single Friday.  If you watch my show, you know that every Friday, this and some variation of topping is on the docket. Friday pizza/movie night is one of my family’s most cherished (and enjoyed traditions). Shannon’s Olive Oil Pizza Crust Makes 3-4 pizzas 7 cups all-purpose flour 1 tablespoon salt 4 teaspoons yeast 2 2/3 cup water 1/2 cup olive oil (plus olive oil for pan and top of pizza) Mix dry ingredients in kitchen aid (with dough hook attachment).  Add olive oil to water.  While the mixer is running, add water and let the dough combine slowly.  Stop mixing JUST when dough is formed. Mini Apple Breads

These great little breads are deliciously moist and cinnamon-ey. Plus, they mix up easily and keep well. The presentation is ADORABLE, if I do say so myself. My little daughters were thrilled with these, because they said they were straight out of a “My Little Pony” episode. Apple Valley? I don’t remember. I’ll ask them when they come home from school.  Should be any minute now….. They are perfect to hand out as quick breakfasts to your kids, to take to work, or for that bake sale you were roped into. Vavich Family Buttermilk Pancakes

There’s really nothing to making pancakes from scratch. Three of my children have this recipe memorized, and my husband does too.  He’s pulls out all the stops on Saturday mornings and makes these.  He’s like a Transformer….  Marine most of the time, but on Saturday (if he’s home) he’s “Breakfast Time Daddy”.  I even wrote a jingle like from those commercials in the 70’s and 80’s.     This recipe makes about two-dozen pancakes.  So, enough for my family.
