There’s really nothing to making pancakes from scratch.
Three of my children have this recipe memorized, and my husband does too. He’s pulls out all the stops on Saturday mornings and makes these. He’s like a Transformer…. Marine most of the time, but on Saturday (if he’s home) he’s “Breakfast Time Daddy”. I even wrote a jingle like from those commercials in the 70’s and 80’s.
This recipe makes about two-dozen pancakes. So, enough for my family. Ha. Actually, if the kids are really hungry we double the recipe. If your family is smaller, you can half this recipe. It will still work just fine.
Vavich Family Buttermilk Pancakes
4 cups all purpose flour
1 teaspoon salt
1 tablespoons baking powder
4 cups buttermilk
In a medium bowl, beat the eggs….
Add the buttermilk.
Combine the salt and baking powder with the flour, then add the egg/buttermilk mixture and stir.
It’s going to be thick and lumpy. That’s okay. That’s what you want.
I melt a little lard on the griddle. You could use nonstick spray if you want.
Pour the batter on the griddle, as you do with pancakes….
Stack em. Stack em high!
Really, there is NOTHING like a tall stack of pancakes.
Aw, here’s baby daughter! She didn’t want the pancake on top. She wanted the bigger one.
I love these pancakes because they are almost cheese-cakey. They are not sweet. They are tangy. So when you add the butter and maple syrup, the flavors compliment each other so incredibly well. The texture is velvetey. Truly a remarkable combination of tastes and textures coming from just a simple pancake.
Well, that’s all I’ve got for you today. Alongside these pancakes, I also photographed some mini apple breads this morning. They are adorable! I’ll have that post ready for you tomorrow. Additionally, I have a small turkey defrosting in the fridge. I’ll be using it to photograph my “French-Style Thanksgiving Turkey” later this week. What makes it French? It’s swimming in white wine, naturally! *hic*
