Marshmallow Fondant

This is a soft, pliable fondant. It’s best to use this the day you make it as it hardens quickly.

1 – 16 oz bag regular or miniature marshmallows

2 Tablespoons water

4 tablespoons butter

2 teaspoons vanilla extract

½ teaspoon lemon extract

Non-stick spray for mixing bowl

2 lbs confectioner’s sugar

Cornstarch for dusting rolling surface

1) In a large glass bowl, combine the marshmallows, water, butter and extracts. Microwave at 30 second intervals until almost completely melted. Stir until smooth. Add food coloring if desired.

2) Spray mixing bowl with nonstick spray. Pour powdered sugar into mixing bowl. Using “dough hook” attachment, run on low and pour the melted mixture into the powdered sugar. Let the mixer do the work for you and mix on low until you get a smooth, taffy-like confection. Wrap in plastic wrap and use as soon as possible.
