
This dish is delicious!! It’s such a surprising, yet scrumptious combination of flavors. It makes a wonderful side dish to seafood, chicken or beef, or it’s a great luncheon meal on its own! Try it and see. You’ll be absolutely hooked!
Red Onion Pickle Ingredients:
1 sliced red onion
1/4 teaspoon salt
1/2 teaspoon sugar
white vinegar (enough to cover onion – see video)
1 tablespoon fresh thyme
Roasted Broccoli Ingredients:
2 heads fresh broccoli
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
Tahini Sauce:
1/2 cup tahini
1/4 ice water
juice from 1 lemon (or 1/4 cup juice)
1 teaspoon sesame oil
1 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
To make the pickle, submerge the sliced onion in the mixture of vinegar, salt, sugar and fresh thyme. See video. Cover and refrigerate for 1-2 hours.
Roasted Broccoli: Cut broccoli into bite size pieces. Toss with olive oil, salt and pepper. Roast at 400° for 15-20 minutes, stirring occasionally.
Tahini Sauce: Whisk the tahini with ice water and lemon juice with a fork until smooth and creamy. Add the sesame oil, honey, salt, garlic powder and pepper. Mix well.
To serve: Drizzle the tahini sauce on the broccoli and top with rounds of pickled onion. Serve immediately. DELICIOUS!
