Roasted Tiny Tomatoes with Balsamic Vinegar

I can’t write “tiny tomatoes” without thinking of that scene in Despicable Me where the villain “Vector” says , “Aw!! And look at this tiny toilet”.
And then it squirts him in the eye and he says “AHHH! CURSE YOU TINY TOILET!!”
Anyhoo, cook these up if you’re cold and tired and IN NO MOOD for raw tomatoes.
Put a sheet of parchment paper on a cookie sheet. Then throw your tomatoes on there and give a few glugs of olive oil.
Sprinkle as much salt as you want. Bake at 400° for 15 minutes.
Take them out of the oven, and throw a few glugs of Balsamic Vinegar on the mix. Bake at 400° for 5 more minutes. This will help the vinegar caramelize just a little.
These taste amazing. I eat them as a snack while I’m puttering around the house. The day I made these, my friend Lydia was here. We enjoyed snacking them after we finished recording the podcasts.
They don’t last long, so five right in.
Really, very literally, packed with flavor. And nutrients to keep you strong this winter.
If you want to add a little “somethin”, sprinkle with crumbled feta cheese. This variation would make a great addition to a Holiday dinner party. You could serve it as a side dish, or on your appetizer table. I think a little finely-chopped rosemary leaves would be good as well. Tell all your guests that these are called “tiny tomatoes” because no one really knows or cares what all the technical names for these tomatoes are. They are just tiny. And delicious. And then pick up a tiny tomato and say, “AH!! Curse you tiny tomato!!” and see who picks up on your joke. Even if 19 out of 20 people think you’ve lost your mind – it’ll be worth it. Because you’ll have found ONE weirdo to add to your collection. And that’s a win!!
