Sicilian Roasted Chicken with Cucumber and Bell Pepper Salad

Fast, easy, delicious. This is the kind of dinner you can throw together in a matter of minutes. Being able to take boneless, skinless chicken thighs out of the freezer, and put them right on the pan is why this dinner has been a mainstay in my home for almost a decade. The spice rub is very easy to assemble and the finished flavor is very similar to the store bought rotisserie chickens that are so popular. 

Ingredients:

1 bag boneless, skinless chicken thighs

1/4 cup olive oil

2 teaspoons salt

1 teaspoon garlic powder

1 teaspoon oregano

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon pepper

2-3 tablespoons lemon juice

greek yogurt for garnish.

Make a spice rub out of the salt, garlic powder, oregano, onion powder, paprika and pepper. Arrange the still-frozen chicken thighs on a baking sheet (I line the baking sheet with parchment paper. Dust the bottoms of each piece of chicken with the spice rub then dab with olive oil. Turn chicken around right side up and dust and oil the chicken again. Bake at a 400 degree oven for 45 minutes to an hour. Transfer chicken to a cutting board after it cools for about 10 minutes. Reserve some of the pan juices. Slice, drizzle chicken pan juices and lemon juice over the chicken. Serve with salad, greek yogurt and a drizzle of fresh lime juice.

2 cucumbers, peeled and diced

red bell pepper and orange bell pepper, sliced

1/4 of an onion, diced

green olives, sliced

Dress with olive oil, balsamic vinegar, salt and pepper
