Watermelon & Feta Salad

Hello, and thank you for being here!  This watermelon and feta salad is surprisingly delicious.  The sweetness of the watermelon is tempered by the very powerful flavors of balsamic vinegar, feta cheese, fresh mint, red onion and more.  The watermelon absorbs all of these flavors and literally melts in your mouth.  This is easy enough to make and eat any day, and is the perfect side dish for a cookout.  It’s juice, so very fresh and delicious!  The perfect way to kick off summer and start to enjoy the beauty of fresh summer produce.  

Ingredients for salad:

1/2 small watermelon, cubed (see video)

1 cucumber (preferably English), sliced, seeded and cubed

1/2 red onion, diced

1 avocado, diced

1 lime (1/2 for dressing, 1/2 for garnish)

1/4 cup cubed feta cheese

fresh mint leaves, about 20 – thinly sliced

Dressing Ingredients:

juice of 1/2 lime

2 tablespoons avocado oil

2 tablespoons balsamic vinegar

1/2 teaspoon salt

1/4 teaspoon white pepper

In a small bowl, combine all the dressing ingredients and stir.  Set aside.

In a medium bowl, combine the cubed watermelon, cubed and deseeded cucumber, diced red onion and cubed avocado.  Gently fold ingredients with a spoon just to make sure the ingredients are well-mixed.  Pour the dressing over the salad, gently fold again to make sure dressing is distributed evenly.  Add feta cheese and most of the mint slices.  Fold again.  Lastly, squeeze the juice of the remaining 1/2 lime over the salad and garnish with the remaining slices of mint leaves.

Excellent served with grilled chicken, fish or eggplant.   Best served 1-4 hours after assembly.
