Make sure the chicken is completely dry inside and out.
Pour 1 teaspoon salt into the cavity of the chicken.
Put all four quarters of the onion into the cavity of the chicken.
Place the chicken in a shallow roasting pan. Drizzle with olive oil and rub all over the chicken with your hands.
Sprinkle the chicken with two teaspoons salt and one teaspoon white pepper.
Roast in a 400°F oven for at least 45 minutes - this greatly depends on the size of the chicken. A larger chicken will require more cooking time. Estimate it will take 15 minutes per pound of chicken. You'll know the chicken is cooked when the internal temperature reaches 180°F.
