I’ve been spring cleaning. While I do not ENJOY cleaning and organizing, I like how having clean spaces enables me to do more of the creative work I love to do.
I’m five days into my OPERATION UNASS SPRING 2024 and I really needed to throw dinner together in a fast and easy way. I asked my teens and my husband to start some rice in the rice cooker and bring home a bagged salad – and that’s dinner for tonight.

No Brainer Roasted Chicken Thighs
Ingredients
- 6-8 chicken thighs – skin on patted dry with a paper towel
- 3 Tbs olive oil or olive oil in a spray bottle
- 2 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- parsley for garnish optional
Instructions
- Spray olive oil on a half sheet pan. Arrange chicken thighs – skin side up – on pan. Spray with olive oil.In a small bowl combine all seasonings. Sprinkle seasonings over chicken. Spray with olive oil again.Roast in a 400°F (200°C) oven for 40 minutes. Great with steamed rice and a bagged salad.
