No Brainer Roasted Chicken Thighs

I’ve been spring cleaning. While I do not ENJOY cleaning and organizing, I like how having clean spaces enables me to do more of the creative work I love to do.

I’m five days into my OPERATION UNASS SPRING 2024 and I really needed to throw dinner together in a fast and easy way. I asked my teens and my husband to start some rice in the rice cooker and bring home a bagged salad – and that’s dinner for tonight.

No Brainer Roasted Chicken Thighs

If you have chicken thighs, some everyday seasonings, olive oil and 43 minutes, you can make this dinner with minimal effort. Three minutes to prep, 40 minutes to roast. You can't go wrong!

Ingredients
  

  • 6-8 chicken thighs – skin on patted dry with a paper towel
  • 3 Tbs olive oil or olive oil in a spray bottle
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • parsley for garnish optional

Instructions
 

  • Spray olive oil on a half sheet pan. Arrange chicken thighs – skin side up – on pan. Spray with olive oil.In a small bowl combine all seasonings. Sprinkle seasonings over chicken. Spray with olive oil again.Roast in a 400°F (200°C) oven for 40 minutes. Great with steamed rice and a bagged salad.
