Simple Roasted Chicken

Only five ingredients! Simple enough for making sandwiches and delicious enough for a full-on meal with sides. This chicken is easy and great.

There are so many ways to make a roasted chicken great.  This is my easiest, most simple way to prepare roasted chicken.  Sometimes I think I like the flavor and texture of this chicken the most.  You really taste the “chickeny” chicken here.   The white pepper on this chicken is really good – I highly recommend using white pepper over black pepper for a simple chicken like this.

Ingredients
  

  • 1 whole chicken
  • 1 onion peeled and quartered
  • 2 Tablespoons olive oil
  • 2-3 teaspoons salt
  • 1 teaspoon white pepper

Instructions
 

  • Make sure the chicken is completely dry inside and out.     
  • Pour 1 teaspoon salt into the cavity of the chicken.
  • Put all four quarters of the onion into the cavity of the chicken.
  • Place the chicken in a shallow roasting pan.  Drizzle with olive oil and rub all over the chicken with your hands.  
  • Sprinkle the chicken with two teaspoons salt and one teaspoon white pepper.
  • Roast in a 400°F oven for at least 45 minutes – this greatly depends on the size of the chicken.  A larger chicken will require more cooking time.  Estimate it will take 15 minutes per pound of chicken. You'll know the chicken is cooked when the internal temperature reaches 180°F.
