Fresh Cranberry-Maple Vinaigrette

This vinaigrette dressing is bright, sparkly, cherry and full-flavored. I made this out of the leftover cranberries I had on hand from Thanksgiving.  The cranberries make a wonderful tart vinaigrette and the maple syrup tamps down any bitterness easily while adding just the right amount of balanced maple flavor.  This makes a versatile dressing for everyday use as well as festive holiday meals.

This dressing is very easy to put together, and is festive, refreshing and versatile.

I especially love this with a salad of

  • greens
  • avocado
  • apple
  • chicken, and
  • slivered toasted almonds

This vinaigrette will be great with your holiday dinner or to make your lunch salads more seasonal.

Ingredients
  

  • 1 cup fresh cranberries
  • 1/4 cup red wine vinegar
  • 1/4 cup maple syrup
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • In a food processor, combine all ingredients and whirr until it's as smooth as you like it.
  • This will keep in the fridge for about a week. It's great on all kinds of salads.
