This vinaigrette dressing is bright, sparkly, cherry and full-flavored. I made this out of the leftover cranberries I had on hand from Thanksgiving. The cranberries make a wonderful tart vinaigrette and the maple syrup tamps down any bitterness easily while adding just the right amount of balanced maple flavor. This makes a versatile dressing for everyday use as well as festive holiday meals.

This dressing is very easy to put together, and is festive, refreshing and versatile.

Fresh Cranberry Maple Vinaigrette

Ingredients
- 1 cup fresh cranberries
- 1/4 cup red wine vinegar
- 1/4 cup maple syrup
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a food processor, combine all ingredients and whirr until it's as smooth as you like it.
- This will keep in the fridge for about a week. It's great on all kinds of salads.
