Simple Focaccia Bread

An incredibly delicious bread that takes just minutes to assemble.  Buttery roasted garlic, fresh rosemary and a hard cheese like Parmesan make the finished product fragrant and delectable.

A soft, delicious bread studded with buttery roasted garlic cloves and fragrant rosemary. You could also add Kalamata olives if you’d like. A light dusting of a hard cheese like Parmesan after the bread bakes gives it a savory, salty finish. This bread is EASY. In fact, I recommend this bread for first-time bakers. For a well-practiced baker, consider this a very simple bread to accompany a full dinner, or as an appetizer – dipped in small bowls of olive oil dotted with Balsamic vinegar.

Simple Focaccia Bread

An incredibly delicious bread that takes just minutes to assemble.  Buttery roasted garlic, fresh rosemary and a hard cheese like Parmesan make the finished product fragrant and delectable.

Ingredients
  

  • 5 cups flour
  • 1 Tablespoon salt
  • 4 teaspoons yeast
  • 2 2/3 cup warm water
  • 1/2 cup olive oil (for dough)
  • 2 bulbs of garlic
  • 2 teaspoons olive oil (for garlic – see instructions)
  • 1/2 cup olive oil for baking pan
  • 1 branch fresh rosemary
  • scant shavings parmesan or other hard cheese
  • a few pinches of salt and pepper

Instructions
 

  • Preheat oven to 400° F (200°C).  
  • In a large bowl combine flour, salt and yeast.  Stir to combine.
  •   Add 2 2/3 water and 1/2 cup olive oil.  Stir until you have a wet dough.
  • Cover bowl and let rise in a warm place for about 1 1/2 hours. 
  • While the dough is rising, slice the tips of 2 bulbs of garlic.  Place the garlic on a small sheet of aluminum foil and wrap the garlic with the foil, creating a little packet.  Place packet on a small baking pan.  Bake at 400°F (200°C) for about 30 minutes.
  • When the dough has risen to about double its volume, lower the temperature of the oven to 375°F (190°C)
  • Prepare a 1/2 sheet pan by coating it with 1/2 cup olive oil. 
  • Turn the wet dough onto the oiled pan and using oiled hands, pat the dough until it covers the pan. 
  • Squeeze the roasted garlic cloves over the dough and distribute evenly.  Strip the leaves off a branch of fresh rosemary and sprinkle over dough. 
  • Sprinkle dough with a few punches of salt and pepper.  Bake at 375° (190°C) for 15-20 minutes. 
  • While the dough is still warm sprinkle with fresh grated hard cheese, like Parmesan.  Sprinkle with salt and pepper.  Slice and serve with salad, soup or any other way you’d like.
