I think with the convenience of bagged salads and bottled dressing, we often forget how simple it is to pick greens out by hand and make a fresh homemade dressing. I find that a custom-assembled salad and fresh dressing is just SO GOOD. It’s fresh, crunchy, juicy and balanced in flavor between sweet, salty, vinegary and peppery.

This simple dinner salad is a common-sense combination of green lettuce, cucumbers and tomato. Fresh mustard vinaigrette – always versatile, is both easy and delicious.

I like to keep my dinner salads simple for two reasons: Less ingredients means less steps. I want to focus my time on preparing really quality vegetables and a good freshly-made homemade dressing. Second, when a salad is served alongside a main dish and side dishes, it needs to be simple texturally, so as not to overwhelm.

Ingredients
  

  • 2/3 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1 Tbs Dijon mustard
  • 1/2 tsp fresh cracked pepper
  • 1-2 pinches salt
  • 2 cloves garlic, crushed

Instructions
 

  • In a small bowl, whip all the ingredients together. Pour over your salad and store the rest in a jar in the fridge for up to four days.
