Buttermilk Mashed Potatoes

These mashed potatoes are so smooth, creamy and intensely flavorful! The addition of the buttermilk gives them a full, round flavor, and my stand mixer method of mashing and whipping them gives them such a smooth texture. I believe that these are the best mashed potatoes in the world. This recipe uses five pounds of potatoes and serves about eight people. I usually double this recipe for holidays. Please see attached video, as I demonstrate important techniques for peeling, boiling and whipping potatoes. Additionally, please see the instructions below for a make-ahead option.

Crockpot Sausage, Date, Pecan and Apple Stuffing (with make ahead option)

A great stuffing whether you make it ahead of time or not. The “make ahead” portion of this recipe is purely optional. I find that on the morning of Thanksgiving it’s so much nicer to just dump my premade “stuffing kit” into the crockpot and get on to other things than to mess with all the chopping and sauteeing that a good stuffing requires. This stuffing is delicious. The drippings from the sausage along the essence of caramelized onions and apples drenches into the rich, toasty bits of wheat and white bread. The dates intensify this sweet/savory amalgamation and the […]

French Style Thanksgiving Turkey (with gravy)

I was planning on re-doing this video, but alas, I ran out of time and with Thanksgiving fast approaching, I thought it prudent to just pull it from the archives and republish it. Cooking a Thanksgiving turkey in front of a camera is a hefty task, as you either need to prepare for a LONG filming day or roast two turkeys. Either option would just cost me too much time and effort at this point, so I give you my video from 2021. The reason, mainly, I wanted to re make the whole video is because my German Shepherd died […]

Old-Fashioned Caramel Corn

Crispy, crackly, buttery and surprisingly easy!  You don’t need a candy thermometer for this recipe.  This delicious caramel makes great homemade gifts to hand out during the holidays.  In under one hour you can have a big bunch of caramel corn to share as gifts or for delicious snacking. This recipe is perfect for cold fall days. Some things to remember:

Braised Short Ribs

This is the kind of thing I make for big family feasts.   If you are looking for a real “show stopper” of a dinner, consider making these sumptuous short ribs.  prepare this dinner earlier in the day and let it slow-cook over several hours.  Even if your dinner is finished early, you can still keep this warm in the oven for a while. This dish is best with a creamy, starchy side dish like mashed potatoes.  Be sure to serve this with creamed horseradish sauce and maybe some baby peas or other vibrant green vegetable. The intensity of the […]

Simple Cheddar Cheese Sauce

Roasted vegetable season is here and there’s nothing quite as delicious on a cold day as a big plate of roasted vegetables topped with a gooey and flavorful cheese sauce.   A preservative-free and all natural cheese sauce – this recipe uses real cheese and nothing “processed”.   If you’ve ever melted cheese in the microwave and been dismayed at how quickly it becomes thick and gummy, you know that there is more to a cheese sauce than just melted cheese.  In order for cheese sauce to be smooth and malleable, it needs to first start as a white sauce […]

Simple Roasted Brussels Sprouts

By far the most tedious part of making this dish is the peeling and chopping of each individual sprout.  My son John, who has always been “tactile”, adopted this chore when he was about four-years-old.  Thankfully, at nearly fifteen, he’s still keen to help me.   My whole family (even little Rosie) absolutely adores roasted Brussels sprouts.  I served these with my simple cheddar cheese sauce.  They were amazing, and I was very happy to have repeats for lunch for the next few days.   I made a large quantity of these for my family.  For my family, four pounds […]

Easy Peanut Butter Cookies

The history of peanut butter cookies. Peanut butter cookies are distinctly American!  First published in a cookbook in 1910, the peanut butter cookie is credited to none other than George Washington Carver!  Carver published a cookbook entitled “How to Grow the Peanut and 105 Ways of Preparing it for Human Consumption”.   Now, with their distinctive waffle-marks on top – they are the quintessential American after school snack.  It’s important to let the baked cookies rest on the hot pan after coming out of the oven so they won’t fall apart.  The peanut butter softens to almost a liquid when […]

Cast Iron Baked Chicken

The cast iron is the secret to creating an incredibly sumptuous and moist chicken, as the cast iron becomes a “super oven” that charges heat and flavor into the meat and seals the moisture in the chicken. A perfect recipe for your very first baked whole chicken, or for a seasoned cook to remember the basics and why you fell in love with cooking in the first place. This is an excellent recipe for any day – your busiest days or a lazy day. You can serve this baked chicken as is for a fabulous dinner, or you can use […]

Chicken Quesadillas

This is the first of the satellite recipes from my master recipes I presented and demonstrated in this video:   In the video, I demonstrate how I prepare 12 freezer-to-crockpot recipes in 30 minutes and for under $200.   The shredded chicken recipe makes fantastic chicken quesadillas!  Here is the recipe for shredded chicken:  Ingredients: 6-7 boneless, skinless chicken breasts 2-3 teaspoons salt 2 teaspoons garlic powder 2 teaspoons onion powder 2 teaspoons chili powder 1 teaspoon black pepper 1 teaspoon cumin 1 cup olive oil 3 cups Pace Picante sauce Dump all ingredients into a crock pot and cook […]

Easy Party Nachos

A big pan of nachos makes any event into a party. Better yet, they are so easy to make! I’ve been making this easy recipe for years. It only takes about twenty minutes to make a literal feast for your family. I set up a “taco bar” buffet style, and everyone serves themselves. My kids especially like choosing their own toppings for their plates of nachos. Want to make this recipe even easier? A few times a year I bulk brown/season/freeze gallon-sized bags of ground beef. I use this pre-make ground beef for nachos, tacos, in soups, in pasta sauces […]

Easy & Amazing Chocolate Banana Bread

This recipe is easily achievable for a beginner, and a fun creative project for an intermediate or advanced baker. If you want an extra challenge, try and devise new and creative toppings for this bread. See * below for suggestions. – While you can wait until your bananas are mostly dark-espresso color, I’ve found that I most prefer a golden yellow banana HEAVILY speckled with deep brown spots. – You could cut back on the amount of sugar, if you wish – if the one-cup quantity looks daunting to you. The bread will still turn out well, although of course […]

Fresh Blackberry Galette

When you have only a handful of berries and a smidge of time, a galette is in order. The less-fussy cousin of the traditional pie – a galette is made with a rustic pastry without a pie pan. It is baked on a flat surface like a sheet pan or a pizza pan. Think of it like a pizza where you fold the edges of the dough over the toppings a little. Quality ingredients are key here in making this simple treat a flavor-packed delight. First, fresh, ripe blackberries. Second, a rustic pastry made with just butter, flour, salt, sugar […]

Easy Roasted Zucchini Bites

A delicious and nutritious snack or side dish that is easy to throw together.  Simply toss zucchini rounds with some olive oil and seasonings, then roast until crispy and caramelized on the outside and soft and creamy on the inside.  Eat as a snack, dipped in your favorite dressing or sauce.

Snickerdoodle Cookies

These creamy, buttery, cinnamon-y cookies are a great way to kick off your fall baking season!  Snickerdoodles don’t require special ingredients.  You probably already have the ingredients on hand. This recipe makes about two dozen good sized cookies.

An Easy Weekday BIG Salad with Fresh Mustard Vinaigrette

A good salad is memorable, satisfying and delicious! Not only is a good salad delicious, but it’s nourishing and packed with fiber. Living in Europe, the UK and Japan has taught me that the world eats a lot more vegetables than most Americans. One of the reasons why non-Americans eat so many vegetables is because they shop almost daily. It’s easy to remember to eat vegetables when you’re browsing the market and picking up a few every day. Another reason why non-Americans eat more vegetables than Americans is because they really know how to mix them, prepare them and dress […]

Freezer Cooking: Freezer to Crockpot BBQ Shredded Pork

Freezer cooking is a great way to save energy, time and money. Having meals ready-to-go in my freezer always makes me a little more “pulled together” than I would otherwise. Even if I’m going through a rough patch or have had a bad day, having dinner ready-to-go helps improve my mood and manage whatever I’m going through just a little more calmly and reasonably. A “freezer to crockpot” recipe is a pre-assembled recipe that is frozen in a bag, defrosted, then just dumped into a crockpot and cooked all day. The prep is very easy, and can be done in […]

Vlog: Easy Sheet Pan Pizza and What it was Like to Stop Homeschooling After Eleven Years

If you’ve ever wondered what it’s like to STOP homeschooling and send all your kids to school, you might find this video interesting. Recorded over facebook live – it’s now on my youtube channel. Homeschooling is a personal choice, and when I decided to stop homeschooling my kids and send them to school eight years ago, I did a google search and found absolutely nothing about how to go about the process and what to expect. I hope this information helps someone. If you’re a teacher welcoming former homeschooled kids to your classroom this year; there are tips here that […]
